Ingredients:
- 1 cup cottage cheese
- 1 egg
- 1/2 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp salt (adjust to taste)

Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Batter:
- In a blender or food processor, combine the cottage cheese, egg, almond flour, baking powder, and salt. Blend until smooth and well combined. You can add your choice of herbs or spices at this stage for added flavor.
- Spread the Batter:
- Line a baking sheet with parchment paper. Pour the batter onto the parchment paper and spread it evenly into a thin layer, about 1/4 inch thick.
- Bake:
- Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the flatbread is golden brown and crisp around the edges.
- Cool and Serve:
