Instructions

  1. Prepare the Syrup:
    • Combine sugar, water, lemon juice, cinnamon stick, and ginger in a saucepan.
    • Heat gently, stirring until the sugar dissolves.
    • Boil for 5-7 minutes until slightly thickened. Remove from heat and chill in the refrigerator.
  2. Make the Dough:
    • In a bowl, mix flour, baking powder, and salt. Rub in the butter until the mixture resembles breadcrumbs.
    • Beat the egg and milk together. Gradually add to the dry ingredients, mixing to form a soft dough.
  3. Roll & Cut:
    • Roll the dough out on a floured surface to about ½ inch (1 cm) thick. Cut into strips or doughnut shapes, as desired.
  4. Fry the Doughnuts:
    • Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the doughnuts in batches until golden brown, about 2-3 minutes per side.
    • Drain on paper towels briefly.
  5. Dip in Syrup:
    • While still warm, immediately dunk the doughnuts into the cold syrup. Let them soak for a few seconds before removing them.
    • Place on a wire rack to allow excess syrup to drip off.
  6. Serve & Enjoy:
    • Garnish with a sprinkle of desiccated coconut or serve as-is for that sticky, sweet, and spiced flavor!
