Ingredients:

  • 2 (8-inch) tortillas (use corn tortillas for gluten-free)
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup Monterey Jack cheese, shredded
  • 1/4 cup cooked chicken, shredded or diced
  • 1 tablespoon onion, diced
  • 1 teaspoon cilantro, chopped

Directions:

  1. Heat the Pan:
    • Heat a pan over medium heat.
  2. Assemble the Quesadilla:
    • Place one tortilla in the pan and sprinkle half of the cheddar cheese and half of the Monterey Jack cheese evenly over the tortilla.
    • Add the cooked chicken, diced onion, and chopped cilantro on top of the cheese.
    • Sprinkle the remaining cheese over the chicken mixture.
  3. Top with Second Tortilla:
    • Place the second tortilla on top to cover the filling.
  4. Cook the Quesadilla:
    • Cook the quesadilla until it is golden brown and crispy on one side, about 2-4 minutes.
    • Carefully flip the quesadilla using a spatula and cook until the other side is golden brown and the cheese is melted, about another 2-4 minutes.
  5. Remove and Slice:
    • Once both sides are golden brown and the cheese is melted, remove the quesadilla from the pan and transfer it to a cutting board.
    • Let the quesadilla cool for a minute or two before slicing it into wedges.
  6. Serve:
    • Serve the chicken quesadillas warm with your favorite toppings such as salsa, guacamole, sour cream, or hot sauce.

Tips:

  • Tortillas: You can use your favorite size tortillas for this recipe. Just adjust the amount of filling accordingly.
  • Additional Fillings: Feel free to add other fillings like bell peppers, tomatoes, or jalapeƱos for extra flavor.
