Ingredients

For the Meatloaf:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried parsley

For the Potato Layer:

  • 4 large russet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter, for greasing the baking dish

For the Topping:

  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, thinly sliced

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.
  2. Prepare the Meatloaf:
    • In a large bowl, combine ground beef, ground pork, chopped onion, minced garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, salt, pepper, thyme, and parsley.
    • Mix well until all ingredients are thoroughly combined.
    • Press the meatloaf mixture evenly into the greased baking dish.
  3. Prepare the Potato Layer:
    • In a large bowl, combine heavy cream, shredded cheddar cheese, sour cream, milk, minced garlic, salt, and black pepper.
    • Add the thinly sliced potatoes to the bowl and toss to coat evenly with the cream mixture.
    • Layer the potatoes evenly over the meatloaf mixture in the baking dish.
  4. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour.
    • After 1 hour, remove the foil and bake for an additional 20-30 minutes, or until the potatoes are tender and golden brown on top.
  5. Add Toppings:
    • Sprinkle the shredded cheddar cheese over the top of the casserole.
    • Return the casserole to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
    • Remove from the oven and sprinkle the crumbled bacon and sliced green onions over the top.
  6. Serve:
    • Let the casserole rest for 10 minutes before serving. This allows it to set and makes it easier to slice.
