Ingredients
For the Meatloaf:
- 1 lb ground beef
- 1 lb ground pork
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1/2 cup milk
- 2 large eggs
- 1/4 cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried parsley
For the Potato Layer:
- 4 large russet potatoes, peeled and thinly sliced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp butter, for greasing the baking dish
For the Topping:
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 2 green onions, thinly sliced
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.
- Prepare the Meatloaf:
- In a large bowl, combine ground beef, ground pork, chopped onion, minced garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, salt, pepper, thyme, and parsley.
- Mix well until all ingredients are thoroughly combined.
- Press the meatloaf mixture evenly into the greased baking dish.
- Prepare the Potato Layer:
- In a large bowl, combine heavy cream, shredded cheddar cheese, sour cream, milk, minced garlic, salt, and black pepper.
- Add the thinly sliced potatoes to the bowl and toss to coat evenly with the cream mixture.
- Layer the potatoes evenly over the meatloaf mixture in the baking dish.
- Bake:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour.
- After 1 hour, remove the foil and bake for an additional 20-30 minutes, or until the potatoes are tender and golden brown on top.
- Add Toppings:
- Sprinkle the shredded cheddar cheese over the top of the casserole.
- Return the casserole to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle the crumbled bacon and sliced green onions over the top.
- Serve:
- Let the casserole rest for 10 minutes before serving. This allows it to set and makes it easier to slice.
