Introduction
Pupusas are a traditional Salvadoran dish made from masa harina (corn flour) and stuffed with a variety of fillings such as cheese, beans, or meats. These delicious stuffed corn cakes are typically served with curtido, a tangy cabbage slaw, and salsa roja. Pupusas are easy to make and are perfect for a hearty snack or meal.
Ingredients
For the Dough:
- 2 cups masa harina (corn flour)
- 1 1/4 cups warm water
- 1/2 teaspoon salt
For the Filling:
- 1 cup shredded mozzarella cheese (or a blend of mozzarella and queso fresco)
- 1/2 cup refried beans (optional)
- 1/2 cup cooked and seasoned ground pork or chorizo (optional)
For the Curtido (Cabbage Slaw):
- 1/2 head of cabbage, shredded
- 1 large carrot, grated
- 1/2 small onion, thinly sliced
- 1 cup boiling water
- 1/2 cup apple cider vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon red pepper flakes (optional)
For the Salsa Roja:
- 2 ripe tomatoes, chopped
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 jalapeƱo, seeded and chopped (optional)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
