Ingredients:
For the Roll-Ups:
- 8 slices of white or whole wheat bread
- 4 oz (115g) cream cheese, softened
- 1 cup fresh strawberries, finely chopped
- 2 large eggs
- 1/3 cup milk
- 1/2 teaspoon vanilla extract
- 1 tablespoon granulated sugar
- 1 teaspoon ground cinnamon
- Butter or oil for frying
For the Topping:
- Powdered sugar (optional)
- Maple syrup (optional)
Instructions:
- Prepare the Bread:
- Trim the crusts off the bread slices. Use a rolling pin to flatten each slice of bread.
- Make the Filling:
- Spread about 1 tablespoon of softened cream cheese on each slice of flattened bread.
- Sprinkle the chopped strawberries evenly over the cream cheese.
- Roll the Bread:
- Roll each slice of bread tightly to enclose the filling. Place the rolls seam-side down to prevent them from unrolling.
- Prepare the Egg Mixture:
- In a shallow bowl, whisk together the eggs, milk, and vanilla extract until well combined.
- Prepare the Cinnamon Sugar:
- In a separate bowl, mix the granulated sugar and ground cinnamon together.
- Coat the Roll-Ups:
- Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
- Dip each roll-up in the egg mixture, making sure to coat all sides.
- Place the roll-ups in the skillet, seam-side down first. Cook until golden brown on all sides, turning as needed to ensure even cooking (about 2-3 minutes per side).
- Add the Cinnamon Sugar:
- As each roll-up is cooked, immediately roll it in the cinnamon sugar mixture to coat evenly.
- Serve:
- Serve the roll-ups warm, dusted with powdered sugar and/or drizzled with maple syrup if desired.
