Ingredients
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel)
- 1 can (15 oz) black beans, drained and rinsed
- 1 bag (10-12 oz) corn chips (e.g., Fritos)
- 2 cups shredded cheddar cheese
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup sliced black olives
- 1/2 cup diced onions
- 1/2 cup sour cream
- 1/4 cup sliced jalapeños (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Cook the Beef: In a large skillet over medium heat, cook the ground beef until it’s no longer pink. Drain any excess fat.
- Season the Beef: Add the taco seasoning mix and follow the package instructions (usually involves adding water and simmering).
- Add Ingredients: Stir in the can of diced tomatoes with green chilies and the black beans. Mix well and heat through.
- Layer in a Baking Dish: In a 9×13 inch baking dish, spread half of the corn chips evenly. Layer the beef mixture over the chips, then sprinkle 1 cup of shredded cheese over the beef. Add the remaining corn chips on top, and finish with the remaining shredded cheese.
- Bake: Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Add Toppings: Remove from the oven and let cool slightly. Top with shredded lettuce, diced tomatoes, sliced black olives, diced onions, and jalapeños if using. Add dollops of sour cream and sprinkle with fresh cilantro if desired.
