Zucchini Tomato Gratin

  • 2 medium zucchinis, thinly sliced
  • 3-4 medium tomatoes, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped (optional)
  • 1 cup shredded mozzarella or Gruyere cheese


  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Vegetables:
    • Thinly slice the zucchinis, tomatoes, and onion. Mince the garlic.
  3. Sauté the Onion and Garlic:
    • In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant. Remove from heat and set aside.
  4. Assemble the Gratin:
    • In a large bowl, combine the sliced zucchini, tomatoes, sautéed onion, garlic, salt, pepper, oregano, and thyme. Toss gently to combine.
    • Arrange the vegetable mixture in a shallow baking dish (9×13 inches or similar size), alternating and layering the zucchini and tomato slices.
  5. Prepare the Topping:
    • In a small bowl, mix the breadcrumbs, grated Parmesan cheese, and remaining olive oil until well combined.
  6. Layer the Cheese and Breadcrumbs:
    • Sprinkle half of the shredded mozzarella or Gruyere cheese evenly over the layered vegetables.
    • Evenly spread the breadcrumb mixture on top.
    • Finish with the remaining shredded cheese.
  7. Bake the Gratin:
    • Bake in the preheated oven for 30-35 minutes, or until the vegetables are tender and the top is golden and crispy.
  8. Garnish and Serve:
    • Remove from the oven and let it cool for a few minutes.
    • Garnish with fresh basil if desired.
