Ingredients:
- 2 large eggplants
- 2 tablespoons olive oil

- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil

Instructions:
- Prepare the Eggplants:
- Preheat your oven to 375°F (190°C).
- Cut the eggplants in half lengthwise and scoop out the flesh, leaving about 1/4 inch of flesh around the edges to form a boat. Chop the scooped-out flesh and set it aside.
