  • 2 large eggplants
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound (450 grams) ground beef or turkey
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)


  1. Prepare the Eggplants:
    • Preheat your oven to 375°F (190°C).
    • Cut the eggplants in half lengthwise and scoop out the flesh, leaving about 1/4 inch of flesh around the edges to form a boat. Chop the scooped-out flesh and set it aside.
    • Place the eggplant boats on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Bake for 15 minutes, then remove from the oven and set aside.
