Chicken Noodles Crock Pot

Delicious and easy Chicken Noodles Crock Pot recipe for you:

  • 1.5 to 2 pounds of boneless, skinless chicken breasts or thighs
  • 6 cups chicken broth (or enough to cover the chicken and vegetables)
  • 2 cups sliced carrots
  • 2 cups sliced celery
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 2 teaspoons dried parsley
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 8 oz egg noodles (or your favorite noodles)
  • 1 cup heavy cream (optional, for a creamier soup)
  • Fresh parsley or chives for garnish (optional)

  1. Prepare the Crock Pot:
    • Place the chicken breasts or thighs at the bottom of the crock pot.
  2. Add Vegetables and Seasonings:
    • Add the sliced carrots, celery, diced onion, and minced garlic on top of the chicken.
    • Pour in the chicken broth until it covers the chicken and vegetables.
    • Add the dried thyme, parsley, basil, salt, and pepper.
  3. Cook:
    • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. Shred the Chicken:
    • Once the chicken is cooked, remove it from the crock pot and shred it using two forks. Return the shredded chicken to the pot.
  5. Add Noodles:
    • Add the egg noodles to the crock pot. Stir to combine.
    • Cover and cook on high for an additional 20-30 minutes, or until the noodles are tender.
  6. Optional Creamy Version:
    • If you prefer a creamier soup, stir in the heavy cream during the last 10 minutes of cooking after the noodles are done.
  7. Serve:
    • Taste and adjust seasoning with additional salt and pepper if needed.
    • Ladle the soup into bowls and garnish with fresh parsley or chives if desired.

  • Noodles: If you plan to have leftovers, consider cooking the noodles separately and adding them to each serving. This prevents the noodles from becoming mushy when reheated.
  • Veggies: You can add other vegetables like peas or corn for more variety.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave.

Enjoy your warm and comforting Chicken Noodles made in the crock pot!
