  1. Prepare the Dough:
    • In a large bowl, mix the flour, salt, and carom seeds.
    • Add the ghee or vegetable oil and mix until the flour resembles coarse crumbs.
    • Gradually add water and knead to form a firm dough. Cover with a damp cloth and let it rest for 30 minutes.
  2. Prepare the Filling:
    • Heat the oil in a pan over medium heat.
    • Add the cumin seeds and coriander seeds, and let them splutter.
    • Add the grated ginger and green chilies, and sauté for a minute.
    • Add the mashed potatoes and boiled peas to the pan. Mix well.
    • Add the garam masala, turmeric powder, red chili powder, amchur, and salt. Mix until all the spices are well incorporated.
    • Cook the mixture for 5-7 minutes, stirring occasionally.
    • Add the chopped cilantro and lemon juice, mix well, and remove from heat. Let the filling cool.
  3. Assemble the Samosas:
    • Divide the dough into 8 equal portions and roll each portion into a ball.
    • Roll each ball into a thin oval or round sheet.
    • Cut each sheet in half to form two semi-circles.
    • Take one semi-circle, and form a cone by folding it in half and sealing the edges with a little water.
    • Fill the cone with 1-2 tablespoons of the potato filling.
    • Seal the open edges of the cone by pressing them together with a little water to form a triangular shape.
    • Repeat with the remaining dough and filling.
  4. Fry the Samosas:
    • Heat oil in a deep frying pan over medium heat.
    • Once the oil is hot, carefully slide in a few samosas, making sure not to overcrowd the pan.
    • Fry the samosas until they are golden brown and crispy, turning occasionally to ensure even cooking.
    • Remove the samosas with a slotted spoon and drain on paper towels.
    • Repeat with the remaining samosas.
  5. Serve:
    • Serve the hot samosas with mint chutney, tamarind chutney, or ketchup.

  • Filling Variations: You can add other vegetables like carrots or even paneer to the filling for variety.
  • Spice Level: Adjust the amount of green chilies and red chili powder to suit your spice preference.
  • Baking Option: For a healthier option, you can bake the samosas in a preheated oven at 375°F (190°C) for 30-35 minutes, turning them halfway through.
