- Prepare the Dough:
- In a large bowl, mix the flour, salt, and carom seeds.

- Divide the dough into 8 equal portions and roll each portion into a ball.
- Roll each ball into a thin oval or round sheet.
- Cut each sheet in half to form two semi-circles.
- Take one semi-circle, and form a cone by folding it in half and sealing the edges with a little water.
- Fill the cone with 1-2 tablespoons of the potato filling.
- Seal the open edges of the cone by pressing them together with a little water to form a triangular shape.
- Repeat with the remaining dough and filling.
- Fry the Samosas:
- Heat oil in a deep frying pan over medium heat.
- Once the oil is hot, carefully slide in a few samosas, making sure not to overcrowd the pan.
- Fry the samosas until they are golden brown and crispy, turning occasionally to ensure even cooking.
- Remove the samosas with a slotted spoon and drain on paper towels.
- Repeat with the remaining samosas.
- Serve:
- Serve the hot samosas with mint chutney, tamarind chutney, or ketchup.
