Ingredients:

  • 500 grams chicken breast (cut into small cubes)
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 1 cup buttermilk
  • 1 egg
  • Oil for frying

Instructions:

  1. Prepare the Chicken:
    • Cut the chicken breast into small, bite-sized cubes.
    • Place the chicken pieces in a bowl and pour the buttermilk over them. Ensure all the pieces are coated well. Let them marinate in the refrigerator for at least 30 minutes. This helps to tenderize the chicken and keep it juicy.
  2. Prepare the Seasoned Flour:
    • In a large bowl, mix the all-purpose flour with salt, black pepper, paprika, garlic powder, onion powder, white pepper, and cayenne pepper.
    • Stir well to combine all the spices with the flour.
  3. Breading the Chicken:
    • Beat the egg in a separate bowl.
    • Take each piece of marinated chicken, dip it into the beaten egg, then dredge it in the seasoned flour mixture. Ensure each piece is well-coated with the flour mixture.
    • For an extra crispy coating, you can repeat the process: dip the floured chicken back into the buttermilk and then again into the seasoned flour.
  4. Frying:
    • Heat oil in a deep frying pan or deep fryer to about 350°F (175°C).
    • Fry the chicken pieces in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per batch.
    • Use a slotted spoon to remove the chicken from the oil and place them on a paper towel-lined plate to drain any excess oil.
  5. Serving:
    • Serve the popcorn chicken hot with your favorite dipping sauces like ranch, honey mustard, or BBQ sauce.

Tips:

  • Ensure the oil is at the correct temperature to avoid greasy chicken. If the oil is too cold, the chicken will absorb more oil and become greasy. If it’s too hot, the exterior will burn before the inside is fully cooked.
  • You can make a large batch of the seasoned flour mix and store it in an airtight container for future use.
