Quesabirria Tacos Recipe



Quesabirria tacos are a delectable combination of birria (a flavorful Mexican beef stew) and melted cheese, folded into crispy, golden tortillas. Originating from the state of Jalisco, these tacos have gained popularity worldwide for their rich, savory taste and the satisfying crunch of the fried tortilla. Serve them with a side of consommé (the birria broth) for dipping, and you have a dish that’s sure to impress.


For the Birria:

  • 3 pounds beef chuck roast, cut into chunks
  • 2 dried guajillo chiles, stems and seeds removed
  • 2 dried ancho chiles, stems and seeds removed
  • 1 dried chipotle chile, stem and seeds removed
  • 1 onion, quartered
  • 4 cloves garlic
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 2 bay leaves
  • 4 cups beef broth
  • Salt and pepper to taste

For the Tacos:

  • Corn tortillas
  • 2 cups shredded Oaxaca or mozzarella cheese
  • Fresh cilantro, chopped (for garnish)
  • Diced onion (for garnish)
  • Lime wedges (for serving)
