- 1/2 head of green cabbage, thinly sliced
- 8 oz (225g) mushrooms, sliced (cremini or button mushrooms work well)
- 1 bell pepper, thinly sliced (optional)
- 1 teaspoon dried thyme or 1 tablespoon fresh thyme
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 4 large eggs
- Fresh parsley or chives, chopped (for garnish)
